Lunch Club - Tuesday, Sept. 16th

Hi gang,

It was nice to see everyone out today!!

We covered a great many topics as they pertain to healthy lifestyle change...Understanding that Variety is the way of doing this...

We discussed how Chunking behaviors down is a key ingredient to maintain change...When we complete a task/goal (be it small or big), we get a deep sense of satisfaction from the Accomplishment. We also discussed Accountability as a valuable tool to keep us on track.

As promised, to our Lunch Club group...we all made some small lifestyle/behavior changes to be completed by next month's Lunch Club (Tuesday, October 21)...they are:

  • for R, to change her Environment and Eat in the kitchen for 5 days (we end up eating fewer calories if we eat in the kitchen!)...she will try Adding a Radio or Reading to enhance the experience
  • for E, to do the same, but >5 days of kitchen eating
  • for L (welcome L!), to be Active/Exercise and run 12 times in the next month
  • for P, to continue to be Active every day (even if it's 5 to 10 minutes)
  • for K, to have 3 to 4 good conversations/Connections in the next month
  • for myself, I will complete the initial draft of my book...and will continue to Eat healthy, Exercise (soccer, floor hockey) regularly and live each day valuing my Values!

BTW...finishing this blog is an Accomplishment (even though it is small), but it still feels great that it's done!! :-)

Hi everyone, it was very nice to meet all of you.I am not able to attend the meeting Tuesday, but I wanted to share with you my accomplishments for the month. Although, I did not run 12 times in the past month (I only ran twice), I did swim twice a week and I also rode my bike and did alot of hiking. I did do something acive 3 three times per week, so I am very pleased with this. I have entered a team relay race to run around Westwood Lake on Nov.1st and I am looking forward to that. I am also very proud to say I did not eat one potato chip in the past month!!! This is a huge accomplishment for me as I am sure I am addicted to them. However, I did have a few multigrain Sunchips.
As promised here is a great recipe for vegetarian chili. Enjoy!!

2 cups black turtle beans
2 tsp. vegetable oil
1 onion chopped
1 clove of garlic, minced
3 Tbsp. chili powder
1 tsp. cumin
1 tsp. paprika
1 tsp. dried oregano
1 can (28oz) plum tomatoes, pureed
1 jalapeno pepper diced (optional)
1 red pepper diced
1 cup of corn
2 Tbsp. chopped cilantro
1 tsp salt
pinch of pepper

In saucepan, cover beans with water and soak for 3 hours; drain. Cover again with water and bring to boil; reduce heat to medium-low and simmer for 30 to 40 minutes or until tender. Set aside.
In large pot, heat oil over medium heat; cook onions and garlic until tender.Stir in chili powder, cumin, paprika and oregano; cook, stirring for 30 seconds. Stir in tomatoes and jalapeno pepper; cook for 10 minutes.
Drain beans and add to tomoato mixture. Add up to 2 cups of fresh water, if necessary, to cover beans with 1 inch of liquid. Cover and bring to boil; reduce heat to medium-low and simmer for 1 hour.
Add red pepper: simmer for 30 minutes or until beans are tender. add corn; cook for 10 minutes. Add cilantro, salt and pepper;

When in a hurry I use 2 large cans of black beans, rinse them and add to the tomato and spices. I omit the 2 cups of water.
